OUR METHODS

Fat Back Cured Meats takes Old World artisanship with a blend of New World flavors. All Fat Back Meats are made by hand, in small batches to insure the highest quality. Our salami, aka Fatties are slowly dried  aged, in a controlled environment, for a minimum of six weeks. The slow aging process develops flavors and textures that excite the taste buds. Fat Back also makes several flavors of Bourbon barrel smoked bacon, fresh sausages, Bacon chutney and Mostarda di Frutta.

While we take our flavor inspiration from across the globe, our products are made locally in Dayton Maine; locally sourcing our meats and other ingredients to the greatest extent possible.
